Behind the horseshoe counter at The Apple Pan, cooks have been griddling Hickoryburgers and Steakburgers on the same Pico Boulevard site since 1947, wrapping each in wax paper and serving them with a side of tart, crispy fries. The real draw might be the fresh-baked pies—apple and boysenberry, mostly—cut thick and served on paper plates by waiters who've worked the counter for decades.
