Louis Tourtois Sr., the former Buddy's chef once crowned the king of pizzas by The Detroit News, opened this Hazel Park institution after stints at both Buddy's Rendezvous and Shield's Pizzeria. His thick-crust, deep-dish squares—caramelized Wisconsin brick cheese pressed to the edges, sauce striped on top—still draw lines before opening in a room frozen in time with red-checked tablecloths and hundreds of Chianti bottles hanging from the ceiling.
