Ramon and Maria Cardenas brought their family recipes to Salt Lake City in 1985, building on a legacy that began with Casa Grande in 1965. Red Iguana has earned national fame for its handcrafted moles—seven distinct varieties that showcase regional Mexican traditions—and has claimed Utah's Best Mexican Restaurant title for over 25 consecutive years. Guy Fieri featured the restaurant on Diners, Drive-Ins and Dives, but locals return for the Killer Mole Negro and Enchiladas Poblanas.
